General

In the Netherlands, potatoes are often eaten as a source of carbohydrates as part of a meal which also includes vegetables and meat. Yet, in terms of both nutritional value and use, you could consider the potato to be a vegetable. In many international dishes, the potato is used as a vegetable. Potatoes are a good source of vitamin B1 and B6, and newly harvested potatoes, especially, as a good source of vitamin C and potassium.

Varieties & Types

In order to meet the diverse needs of growers, processing companies and consumers, over time many different potato varieties have been developed. There are white, yellow and red-skinned potatoes, firm, crumbly and those suitable for chips, from small baby potatoes to large solid ones.
