General

Carrots are large, fleshy tubers with a bright orange color. Its center is a little lighter in color. Carrots can be stored easily for a couple of weeks and are therefore handy to have them in the kitchen. It is thought that the first carrots were cultivated in the Netherlands and Belgium in the 15th century. Two centuries later, after it was crossbred various times, this root vegetable made its way through Europe. In the Netherlands, carrots are grown on more than 7 000 hectares of land.

Health

Carrots belong to the root vegetable family and contain all kinds of minerals, like potassium, sodium, calcium and phosphate, and vitamins, like different types of vitamin B, vitamin E and beta-carotene. Beta-carotene is a substance found in carrot roots. Beta-carotene, in turn, contains carotenoids. Carotenoids are dyes that are found in plants, bacteria and animals. These are converted to vitamin A in your body. Vitamin A is good for your skin and eyes. It also helps you build and maintain a healthy immune system.
